From 50:50 to Olive Oil: The Martini’s New Rules for World Martini Day
From 50:50 to Olive Oil: The Martini’s New Rules for World Martini Day

Italy June 2026: On World Martini Day 2026, a new set of rules is emerging across the world’s best bars, from olive oil to the 50:50, from terroir to texture, reshaping how the martini is built and understood. Firmly within this global shift sits Altamura Distilleries, the Italian vodka distilled from Puglia’s ancient durum wheat, increasingly present in the conversations and bars defining modern cocktail culture.
The martini has always rewarded conviction. For more than a century it has been the benchmark of the bar: simple in construction, unforgiving in execution and endlessly debated. But across London, New York and beyond, the drink is being rethought with a new sense of balance, flavour and cultural relevance, reflecting a broader evolution in how people want to drink today.
Part of that evolution is being driven by the rise of exceptional vermouths. The increasing appreciation of bottles such as Carpano, Noilly Prat and Mancino has opened the door to wetter martini styles far beyond the now fashionable 50:50. Bartenders are once again treating vermouth not as a background ingredient, but as an essential part of the cocktail’s structure, aroma and identity.
Alongside this is a growing openness to olive oil as a serious cocktail ingredient and a renewed focus on provenance led spirits. Together, these movements are reshaping the martini into something more expressive, layered and culinary in character. Altamura, born from a durum wheat cultivated in Puglia for more than two thousand years, sits naturally within this moment. Its natural umami depth allows it to work with olive oil’s savouriness rather than be overwhelmed by it.
This evolution found a defining expression at Clemente Bar in New York, where a martini built with Altamura Distilleries Vodka was recognised by Esquire as Martini of the Year. Created by Sebastian Tollius and Richie Millwater, the drink combined curry, green chilli and olive oil, fat washed into both vodka and gin before being layered with vermouths to create something savoury, textured and unexpected. Altamura was chosen not for neutrality, but for character.
Running alongside this is the revival of wetter martini served more broadly. Once dismissed as diluted versions of the classic, these styles are now being reappraised as more refined and expressive interpretations of the drink. Lower in alcohol yet richer in complexity, they reflect a move towards longer, more social drinking occasions where balance and flavour take precedence over sheer strength.
For a spirit like Altamura Distilleries Vodka, this shift is not a compromise but an opportunity. The vodka brings enough earthiness, texture and soft spice to hold its structure as vermouth takes on a larger role. Where a neutral spirit disappears, Altamura converses.
That philosophy is reflected in the Altamura house martini itself. Built to a 75/25 ratio and finished with orange bitters, the serve intentionally nods back to the earliest martini recipes, where bitters, aromatics and texture played a central role in the cocktail’s identity. It is a reminder that the martini was originally conceived as a complete cocktail, not simply a glass of ice cold vodka.
This sense of character begins at the source. Altamura is the world’s first vodka distilled entirely from 100 percent Altamura durum wheat, the same ancient grain that defines the region’s Protected Designation of Origin bread and has shaped Puglia’s culinary identity for millennia. Triple distilled and bottled at 43 percent ABV, the spirit is smooth and full bodied, with notes of citrus, soft spice and a persistent umami character.
Recognition has followed quickly. Wine Enthusiast awarded Altamura 94 points, describing it as a pristine choice for vodka martinis, while the Drinks International Bartenders’ Brands Report identified it as a standout new entrant at the top end of the global bar trade.
From its origins in Puglia, Altamura has rapidly established itself on the world stage. It now sits in bars shaping international cocktail culture, from Martiny’s in New York to leading venues across London, Barcelona and across its homeland in Italy. Distribution spans more than 17 countries and 26 US states, with growth exceeding 200 percent year on year. As of 2025, it also holds the position of Official Vodka Partner of The World’s 50 Best Hotels.
In a category historically dominated by French and Polish producers, Altamura Distilleries Vodka represents something genuinely new: an Italian vodka with a clear sense of origin, flavour and purpose.
The martini has always reflected the culture around it. In 2026, that culture is asking for more flavour, more intention and more honesty about where things come from. Altamura Distilleries Vodka, a spirit rooted in ancient ground and shaped by a clear point of view, sits firmly within that shift.

From Puglia to Africa: Altamura Distilleries Partners with Born Free with a Joint Global Mission to Protect Wildlife
From Puglia to Africa: Altamura Distilleries Partners with Born Free with a Joint Global Mission to Protect Wildlife

Italy – Feb 2026: Altamura Distilleries has announced a new global partnership with Born Free, an international wildlife charity dedicated to protecting wild animals and preserving wildlife in their natural habitats. The collaboration brings together two worlds connected by a powerful shared symbol: the lion.
For both Altamura Distilleries and Born Free, the lion symbolises courage, guardianship and the fight for freedom. It is also the historic emblem of the city of Altamura in Puglia, whose lioness has appeared on the city’s coat of arms and stone architecture for centuries as a protector of the land and its famed wheat fields. The Altamura Distilleries Vodka lioness is drawn directly from this legacy.
For Born Free, the lion lies at the heart of the charity’s identity and origins. The lion in Born Free’s logo represents Elsa, the lioness made famous in the 1966 film Born Free, in which the charity’s co-founders, Bill Travers MBE and Dame Virginia McKenna DBE, starred. IBill,Virginia and their eldest son, Will Travers OBE, later went on set up the organisation and to dedicate their lives to ensuring that wild animals can live freely, with dignity and protection.
This shared symbolism forms the heart of the partnership. Altamura Distilleries Vodka and Born Free are united by a belief in heritage, identity, and the importance of protecting what is precious.
In a partnership built on purpose, in support of Born Free’s mission, Altamura Distilleries Vodka will introduce a series of commitments designed to raise awareness and generate meaningful impact:
• A corporate donation from Altamura Distilleries Vodka, supporting Born Free’s work rescuing animals from captive exploitation and protecting threatened species in the wild.
• A calendar of fundraising events worldwide, bringing together hospitality communities, industry partners, and supporters.
• A dedicated Altamura Distilleries Vodka cocktail bar at Born Free’s Gala in London in March, serving signature drinks inspired by the landscapes and species the charity protects.
• A commitment to explore further global activations, combining storytelling, culture, and gastronomy to help elevate Born Free’s message internationally.
Molly Rutherford, corporate partnerships manager at Born Free, commented: “We are thrilled to welcome Altamura Distilleries Vodka as a global partner. The connection between Born Free and the distillery, through the symbolism of the lion, is a powerful and authentic foundation for this collaboration. Their commitment to supporting our work, from creating meaningful fundraising moments to helping amplify our mission, will make a tangible difference to the lives of wild animals in need. We look forward to building this partnership together and inspiring more people to stand with us to protect wildlife and keep it in the wild.”
Frank Grillo, co-founder, Altamura Distilleries, commented:
“Born Free’s story has inspired generations, and their lions have always symbolised strength, heritage, and protection. The fact that our own emblem is the Lion of Puglia makes this partnership especially meaningful. It reflects a shared respect for history, for the natural world, and for the responsibility we all have to safeguard it. We are incredibly honoured to stand beside Born Free and help support their mission to protect wild animals around the world. This partnership is about more than fundraising. It is about using our voice, our craft, and our global community to help safeguard the natural world for future generations. When we say “Let’s Roar”, we really mean it!
A Story Rooted in Connection
For consumers, the partnership creates a new way to engage with a brand driven not just by craftsmanship but by conscience. Each sold bottle of Altamura Distilleries Vodka offers a contribution to the protection of wildlife, while events and activations will offer opportunities to learn, experience, and support Born Free’s work in an accessible, cultural, and hospitality-driven setting.
At a time when global wildlife faces unprecedented challenges, this collaboration harnesses the emotional power of storytelling, the creativity of the drinks world, and the universal symbolism of the lion to inspire audiences worldwide.

Altamura Distilleries Launches Nationwide Cocktail Competition Inviting Italy’s Bartenders to ‘Re-Imagine the Classics’
Altamura Distilleries Launches Nationwide Cocktail Competition Inviting Italy’s Bartenders to ‘Re-Imagine the Classics’

ITALY, SEPTEMBER 2025: In a proud and exciting milestone, Altamura Distilleries announces its first-ever nationwide cocktail competition in Italy, a country that has long defined elegance, innovation and excellence behind the bar. This new initiative marks a significant moment for Altamura Distilleries as it invites the nation’s bartenders to rethink tradition and explore the full potential of vodka as a base for classic cocktails.
Launching on 1st September, the Altamura Distilleries Italia Cocktail Competition invites bartenders from across Italy to take on a unique challenge: reinterpret a classic cocktail that does not traditionally feature vodka, using Altamura Distilleries Vodka as the base spirit. Entries close on 30th September, with top entries progressing to live semi-finals in Milan, Rome and Naples, followed by a Grand Final in Florence.
This is more than a cocktail competition. It is a creative call to arms, celebrating the expressive versatility of Altamura Distilleries Vodka and encouraging bartenders to view the greats of the cocktail canon through a new lens. Crafted from 100% Altamura durum wheat – a rare heritage grain grown in Puglia and used to make Pane di Altamura, the only PDO-protected bread in the world – the vodka offers a flavour and texture profile far beyond what most expect from the category.
Altamura Distilleries Vodka delivers delicate notes of aniseed, lemon zest and cracked pepper, along with a creamy, umami-forward mouthfeel and a long, expressive finish. This is vodka not as a neutral filler but as a genuine contributor to the cocktail experience – a foundation for flavour that invites reinterpretation of drinks from the Negroni and Manhattan to the Daiquiri and beyond.
“Any other spirit would face challenges across the full cocktail repertoire. Vodka doesn’t,” says Lorenzo Di Cola, Head of Brand at Altamura Distilleries. “Our vodka goes further. Its structure and flavour depth allow bartenders to explore new dimensions while staying true to the soul of the classics. This competition is about celebrating that freedom and creativity.”
Italy has long played a central role in shaping the global bar landscape. From the golden age of hotel bars in Rome to the experimental energy of Milan and Naples, Italian bartenders have always stood at the forefront of hospitality and innovation. The Altamura Distilleries Italia Cocktail Competition honours that legacy while helping shape its next chapter.
The semi-finals will take place in Milano October 13th, Roma 14th and Napoli 15th, with the Grand Final in Firenze on November 9th and 10th. The regionals will be judged by some of the mixologists from the best-known bars in Italy, while the finals will be judged by a panel of the best mixologists from around the world.
To build excitement, the bar locations for each event and the names of the judges will be revealed gradually over the next four weeks.
One winner from each semi-final will advance to the Grand Final on 10th November at Locale in Florence, one of Italy’s most respected cocktail destinations,The three finalists will each be awarded an extraordinary prize: access to four of the most influential events in global hospitality and drinks culture:
- The World’s 50 Best Hotels
- Tales of the Cocktail – New Orleans
- Roma Bar Show
- Athens Bar Show
These experiences offer each finalist unparalleled inspiration, international exposure and the opportunity to connect with leaders shaping the future of global mixology.
As the competition draws near, Altamura Distilleries Vodka invites bartenders across Italy to reflect on the classics, push creative boundaries and help redefine what vodka can be, not just with vodka, but because of it.
